Sourdough bread is made with a natural leavening agent, which is called the mother-dough. The mother-dough is nothing more than rye flour mixed with lukewarm water. After feeding this mixture during one week and keeping it at room temperature, it starts to ferment and to release some natural bacterias that will make your bread-dough rise. Because of this natural fermentation process, sourdough bread is better for your health and easier to digest than any manipulated yeast normally used in making bread. The nice structure and beautiful taste of sourdough bread comes from this natural fermentation process.

We bake our own bread three times a week, and honestly, we prefer not to eat any other bread anymore. We believe it is very important to know exactly what goes in-to your bread (and into your food in general) and that it is all 100% natural.

The flour we choose for you comes from a family farm based in Corrèze since 1900. This farm specializes in producing traditional French flour in a cylinder mill. From the field to the mill, no preservatives or any other chemicals are used. A family company that is well known for its natural flour, for the quality of its product, and for maintaining customer satisfaction.

What’s in the box

1 kg of rye flour
Rye flour is a type of grain that is darker than the usual wheat flour, it is slightly grey and is used to bake rye bread. Rye flour has a high fiber content and a high amount of minerals. Fibers are important in promoting a healthy digestion and prevents digestive complaints and constipation. Furthermore, it ensures a more satiating feeling than other grains, which leads to eating less.

Rye flour is needed to start and keep feeding your mother-dough. In our recipe we also add rye flour in the mixture.

1 kg of traditional French wheat flour
Traditional French wheat flour is a white flour and is useful for any kind of baking. It is tastier than normal plain white flour.

Proofing basket with linen cloth
Our proofing basket is a round basket of 22 cm by 8,5 cm and is made of rattan cane, 100 % natural wood. Not only does your dough rise better in the proofing basket, it also leaves a nice pattern on your bread.

Scraper
Our scraper is made of stainless steel with a wooden handle. From scraping off bread dough from the kitchen counter, to making a perfect ball from your dough, as well as cutting dough, you will find it an indispensable tool in the kitchen.

Bakers knife + 5 lames and lame protector
A really sharp little bakers knife with a wooden handle to make a cut in your bread dough just before you slide it in the oven. There are 5 lames and a lame protector included with the knife.

Sea salt
One of the must have ingredients in your bread is salt so we have added some nice French salt in your box.

Detailed recipes
There are two recipes to the box: one to make your mother-dough and the other to bake a sourdough bread. These recipes will lead you step by step in the process of baking your own bread. The recipes are both French and English.
